Baking for the Head Mouse
Interviewing for the Disney Culinary Program is one of the most intimidating things I have ever done. Thankfully, my school makes the interview process a lot easier because one of the top Disney Chefs, Chef Pauli comes to interview those of us who make an appointment. If you go to Johnson & Wales, or Culinary Institute of America, you will go through the same process. Here are some helpful tips to prepare for the interview:
- Reserve your interview spot ASAP. The beginning of the trimester is the best time to do so.
- Apply for the internship a few months in advance. I applied online in the summer and I reserved my interview spot the second week of fall trimester (My interview was the last week of October).
- Know your methods of preparation for basic baking & pastry formulas. Especially mousse, creme anglaise, and creme brulee.
- Chef may ask a question about a plated dessert for kids, think about desserts at Disney that are trending at the moment, you want to say something interactive, like “Build Your Own” cupcakes with a variety of toppings, or a trifecta of cake pops
- Chef also likes to ask a question related to a plated dessert you would make for a special event, get creative! He wants to hear something different (I said fried cheesecake).
- Know your basic temperatures, fat content %’s of dairy, and recipe conversions
- If you want to work at a particular place, tell Chef! It never hurts to ask, and he may even ask you (:
